I havent been on the forum in a while coz all the moaning does my head in, but OMG people, I literally can't find a thread thats not full of doom and gloom....

I have a challenge for you all, go on to a moaning, miserable topic, and lighten the mood (ok maybe not the ones about people dying, but you know what I mean, lol)

Moaning and whining will not change a thing that is a guarentee.... will just give you wrinkles and headaches

My thread's always happy, so I'm in a metal box in the stifling heat thousands of miles from my loved ones (wife, cats, footy team), but there will always be a BCFC, or worst case, a SHA.

I tried to ring Daz last night at about 9pm, but his phone rang out. I can't believe that it was too loud at a friendly to hear the phone.

3 green cardamom pods 1 tablespoon sugar 4 peppercorns 2 1/2 teaspoons baking powder 2 whole cloves 1/2 teaspoon coarse salt 1 star anise 1 3/4 cups low-fat buttermilk 1 (3-inch) strip of orange zest 1 egg 1 cup pure maple syrup 2 tablespoons unsalted butter, melted and cooled, plus more for pan



To make the syrup, very lightly crush the spices with a mortar and pestle on with the bottom of a small frying pan, just to break them up a bit. Combine spices, orange zest, and maple syrup in a small saucepan. Heat over medium-low until syrup is hot, but not bubbling. Remove from heat and let steep at least 30 minutes, but no longer than 1 hour. Strain syrup through a fine sieve or tea strainer and reserve. Syrup may be made up to 1 week in advance. Store covered and refrigerated.

To make the pancakes, combine flour, sugar, baking powder, and salt in a large mixing bowl. In a separate bowl, combine buttermilk and egg. Make a well in center of dry ingredients and pour in buttermilk mixture. Whisk until just combined (batter will be lumpy), then fold in the melted butter. Let batter sit 5 minutes before making pancakes.

Heat a nonstick griddle or pan over medium heat. Fold cherries into batter. Brush griddle with melted butter and ladle batter in 1/3 cupfuls. Cook each pancake until underside is golden and top is bubbled; turn to cook other side. Repeat with remaining batter, adjusting stove temperature if necessary. Serve pancakes with spiced maple syrup and more fresh cherries.
